
Green Tea Ice Cream, Dairy-Free Matcha Ice Cream, and Earl Grey Ice Cream Recipes

Green tea ice cream has long been a favored dessert in Japan. The sweet treat, made with matcha powder, is enjoyed in the western world too.
The creamy, delicate matcha translates to a light, refreshing ice cream. Our high-quality matcha tea powders are full of green tea flavor and are a treat for family and friends.
Below are three of our favorite tea ice cream recipes. You’ll need an ice cream maker for these recipes (and about 5 hours’ chilling time).
Green Tea Ice Cream Recipe
Makes about 1 quart.
- 2 cups heavy cream
- 1 cup whole milk
- 1/4 teaspoon salt
- 6 eggs
- 2/3 cup sugar
- 2 tablespoons Matcha Green Tea Powder
In a 4-quart pot, bring cream, milk and salt to a boil, then remove from heat. Whisk the eggs, sugar and matcha together, then add 1 cup hot cream mixture in a slow stream, whisking vigorously. Whisk the remaining cream mixture and continue to cook over low heat, stirring constantly with a wooden spoon. Do not let boil. The mixture should be thick enough to coat back of a spoon (170°F on a thermometer).
Carefully pour the custard through a fine sieve into a metal bowl and cool to room temperature, stirring occasionally. Chill for at least 1 hour. Freeze in the ice cream maker, then transfer to an airtight container and put in the freezer to harden.

Dairy Free Matcha Green Tea Ice Cream Recipe
This ice cream is made with coconut milk and is vegan and gluten free. Start with a chilled ice cream maker that has been in the freezer for 24 hours.
- 1 can coconut milk
- 1 to 2 teaspoons Vanilla Matcha Tea Powder
- 1/2 cup sugar
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla
- Squeeze of lemon
- Pinch of salt
Whisk together the matcha, sugar, maple syrup, vanilla, lemon and salt. (If your matcha is lumpy, you can strain the mixture before putting it into your ice cream maker). Pour into a freezer-safe container and freeze for at least 1-2 hours to firm up a bit. Then transfer into your ice cream maker and churn according to manufacturer’s directions.
You can also try White Chocolate Matcha Green Tea Powder with either recipe. And, since matcha is green tea in powdered form, it can be mixed into just about everything. Blend our matcha into tea lattes, smoothies, shakes, lemonade and more; the options are endless!

Earl Grey Ice Cream Recipe
Another favorite is Earl Grey Ice Cream. Serve this with crisp cookies or shortbread.
- 2 cups half and half
- 2 cups whipping cream
- 8 tablespoons Premium Earl Grey
- 1 1/3 cups sugar
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
In a pot combine half and half and whipping cream. Over medium heat, bring to a soft boil, approximately 5 minutes. Remove mixture from heat and add Premium Earl Grey Black Tea; steep for 4 minutes, then strain.
Place tea mixture, sugar, vanilla and 1/2 teaspoon salt in mixer bowl; beat on medium until sugar dissolves. Chill in refrigerator. Once cool, place mixture in your ice cream maker and churn as directed.
