The addition of a SCOBY (a symbiotic colony of bacteria and yeast) creates a nutrient-rich drink that provides vitamins, minerals, acids and enzymes. Fermentation can take anywhere from 5-10 days depending on temperature of the space and the thickness or strength of the SCOBY. Sugar is consumed during fermentation, so kombucha ends up being a low-sugar drink when ready to consume. It’s slightly sweet and tangy flavor is also delicious.
Kefir is a cultured dairy product, rich in probiotics. It is a tangy, slightly effervescent drink with similarities to a thin yogurt. It’s an age-old beverage from the Caucasus Mountains in Western Asia. Kefir is made using starter “grains,” which is a combination of bacteria and yeasts that interact with the milk to make the lightly fermented drink. These grains are actually a gelatinous grouping holding a generous variety of bacteria and yeast from which you can continually make new batches of kefir.
