Summer Tea Popsicle Recipes

We all love cool treats on warm summer days! You can incorporate your favorite teas to into your popsicles. These treats are simple to make and delicious, and you are making them so you know exactly what is in them (unlike many store-bought frozen treats).

A couple of things to note… the freezing process dulls the flavor a bit so you may want to add double the tea and a little extra sweetener of your choice. Frozen treats are just expected to be a little sweeter. When you double the amount of tea it helps the nuances of that tea still shine through; experiment a bit. Also, once you’ve set the popsicles to freeze, after the first hour stir the mixture — this will help the sweetener to not settle at the tip. And, if you don’t have popsicles molds and sticks, try an ice cube tray and toothpicks.

Lemon Green Tea Popsicles

¼ cup lemon Juice

1 ¼ cups water, for lemonade

¾ cup sugar

2 tsp your favorite green tea

1 ½ cups water, for tea

Popsicle mold and sticks

Bring 1 1/2 cups of water to a boil and brew green tea per its instructions. Let steep extra long, about 8 minutes.
Add 1/4 cup lemon juice and 1 1/4 cups of water.
Add 3/4 cup of sugar and mix it all well.
Divide the mixture amongst your popsicle molds and freeze them
Enjoy in about 7 to 10 hours.

Chai Popsicles

Brew your favorite chai, double the amount of tea

Add almond milk, half and half, or coconut milk

Add double the sweetener (sugar or honey)

Popsicle mold and sticks

Stir together chai, milk, and sweetener until well combined. Pour the mixture into popsicle molds, and place in the freezer until completely frozen, about seven hours. Remember to stir again in one hour.

When you are ready to eat the popsicles, run warm water over the outside of the mold to loosen the popsicles.

Peach Tea Popsicles

1 pound peaches

1 favorite milk alternative (non-dairy almond, hemp)

5 tsp favorite unflavored black tea

2 tablespoons honey

1/2 teaspoon vanilla

Popsicle mold and sticks

Bring a pot of water to a simmer. Cut an X into the bottom of the peaches and set in just-boiling water for roughly 30 seconds, just long enough to loosen the skin. Remove from the water and let just cool enough to handle. Peel off the skin, remove pit, and cut into wedges.

In a small skillet heat almond milk (or other non-dairy milk) until hot. Remove from heat and add tea. Let brew for 5 minutes. Strain.

Mix the peaches, tea and almond milk combination, honey, and vanilla in a blender. Puree until mostly smooth, leaving a few peach chunks if desired. Divide the mixture into a 6 popsicle mold. Set popsicle sticks in and freeze for 7 or more hours, until the popsicles are set.
