Teatime Shortbread Cookies
Remember all of the mothers in your life… aunts, sisters, mothers-in-law, teachers, besties. Share some indulgent teas and a batch of these simple, decadent homemade shortbread cookies!
1 cup powdered sugar
1 pound of butter, softened
4 ½ cups flour
Optional: 2 teaspoons vanilla extract, or 2 teaspoons lemon juice and the zest of one lemon
Preheat oven to 325 degrees. Blend the sugar into the butter and then gradually add the flour, one cup at a time. The dough will start out very thick. Place dough on a floured surface, pat down, and roll out ¼ to ½ inch thick. Cut into 2 ½ inch squares and place on ungreased baking sheet. Prick the top of each square with a fork.
Bake for 25-30 minutes until cookies are pale on the top and golden on the bottom. Remove from the oven and cool on a wire rack.
Take two for yourself while you sip your afternoon tea, and send the rest off to mom!
