Turkey Tea Marinade Recipe

With Thanksgiving coming up soon, let’s talk turkey. And tea.

Surprisingly, the two go together very well. Not only do our strong black teas complement the rich flavors of turkey, but you can use tea to cook your turkey! For a fantastic variation on classic Thanksgiving turkey, try our Tea-Brined Turkey recipe below.

Grilled Turkey Tea Marinade

1/2 cup loose tea leaves (try a strong black tea like Premium Earl Grey, Ginger Darjeeling Peach, or Organic English Breakfast)

1 1/2 cups brown sugar
3/4 cup salt
2 onions, sliced
2 lemons, sliced into thin rounds
10 garlic cloves roughly chopped
6 sprigs of fresh rosemary
3 tablespoons ground pepper
6 cups ice cubes
One turkey, cut up into large pieces

Bring 3 quarts of water to a boil in a large saucepan. Turn off the heat and add tea leaves. Steep for 10-15 minutes.

Strain out tea leaves and stir in sugar, salt, onions, lemon, garlic, rosemary, and pepper. Allow the marinade to cool for an hour, then stir in ice.

Place marinade and turkey into gallon-sized freezer bags and seal. Refrigerate for 24 hours. Remove turkey and discard marinade, then dry turkey with paper towels.

Grill turkey, turning it every 20 minutes until done.
