Honey is one of nature’s many treasures. It has antibacterial properties, antioxidants, and is a delicious ingredient to make many recipes just a little better and more moist.

Infused honey takes it up a notch. There are so many uses for lemon honey. Use it to sweeten tea, fruits and baked goods. You can use it to balance out a salad dressing or marinade. Here’s our Favorite Lemon Infused Honey Recipe:
1 cup honey
1 tablespoon grated lemon peel
2 whole slices of fresh lemon
Pour 1 cup of honey into your pan and add 1 tablespoon of freshly grated lemon peel and two full slices of lemon. Heat together on low for about 10 minutes. After you’ve heated the mixture, let it cool, then transfer it to the jar and let it sit in the fridge for at least 48 hours. The longer you infuse it, the stronger the flavor.
After it has infused, strain honey through a mesh strainer and place in a glass jar with a tightly fitting top. Straining is easiest when honey has been warmed slightly, making it easier to pour. Simply re-heat by placing the jar in warm water.
Store honey in a glass jar with a lid in the fridge for up to 2 months. Infused lemon honey makes a lovely gift, presented in a decorative jar.
